The frittata: it sounds fancy but it's actually a really easy dish that you can make using left overs. It’s basically a big omelette that’s finished off in the oven and resembles a crustless quiche. It’s perfect for a weekend lunch and is great served with salad.

The hero of a frittata is really the mighty egg: Eggs are a protein powerhouse and are chock full of vitamins and minerals. Plus, it’s one of the staples of the Neat kitchen so we’ve always got some to hand. A frittata makes a nice change to the monotony of poached or scrambled eggs and feels like an indulgence.

So what to add to the eggs to make a truly tasty treat? Our trusty Supergreens Powder of course! METHOD:

The above ingredient list is a guide. We used leftovers from the Neat fridge because sometimes, the best meals are those made from what you’ve got left! So feel free to adjust according to what’s in your cupboards.

Firstly, preheat the oven to 180c (adjust accordingly for fan ovens) while you cook your sweet potato and broccoli – there is no right or wrong way to do this and whatever your method, we’re sure they taste great. We steamed our broccoli and boiled our sweet potato but roasting would be just as nice! Cut your red onion into chunks and place everything to one side while you get the egg mix ready.

Whisk you eggs, almond milk and Supergreens together thoroughly. Pop a little coconut oil in a frying pan over a medium heat. Pour in half your egg mix and then add your other ingredients to the pan. You can do this as artfully or as fuss-free as you like! Once you’re happy, pour the remainder of the egg mix over the veg and leave to cook for five minutes.

Transfer the frying pan into the oven where the frittata will continue to cook. Ten minutes should be enough for it to turn that golden brown colour. Be careful removing from the oven! Remember, that pan will be hot – use oven gloves or wrap a tea towel around the handle. 

Serve with salad or veg and you’ve got a tasty brunch treat full of protein, vitamins and the fuel your body needs for the rest of the day.
