Naughty but Nice Rum Balls
Christmas is all about indulgence, so food blogger Katie Morgan has given our favourite Neat snack a decadent festive twist with a splash of spiced rum! Keep them "nice" and leave out the rum for your afternoon snack at work, or be a little bit naughty and spice them up for your next Christmas party.
METHOD:
Soak your pitted dates in boiling water for an hour (this is optional but means that they will blend much better).
Drain the dates and place them in a food processor with the sultanas, honey or maple syrup and coconut oil and blend until you have a smooth caramel consistency.
Add in the rest of the ingredients and blend again until well-combined.
Place the mixture in the fridge for an 30mins – 1 hour. Then you're ready to roll! Keep a small bowl of water on hand to keep your hands moist as you go.
Once rolled, toss the rum balls in finely desiccated coconut and keep them in the fridge. They'll last up to 3 weeks – if they can resist them that long!
Naughty or Nice Rum Balls (Serves approx. 14)
- 2.5 cups of rolled oats
- 2 servings Neat Nutrition Whey Protein (Chocolate)
- 16 medjool dates pitted & soaked in hot water
- 2 tbsp. coconut oil
- 1/2 cup cacao powder
- 1 cup desiccated coconut
- 1 cup sultanas
- 3 tbsp. honey or pure maple syrup
- A big splash of Captain Morgan’s Rum (optional but they wont be “rum” balls without it!)
