Raw Protein Seed & Nut Bar

These protein added seed and nut bars are so easy to make and the perfect hit of chocolate and nuts to keep you moving through the afternoon!

METHOD:

Place all of the dry ingredients into a food processor and pulse the nuts and seeds – do not over-pulse, because you want them to be crunchy. Pour the nuts and seeds into a large bowl and set aside while you prepare the rest of the bars.

Place the dates, water, peanut butter and chocolate vegan blend into the food processor, pulse until all of the ingredients are well combined and turn into a paste like consistency. 

Pour the date mixture over the dry ingredients; combine the ingredients using your hands, making sure the nuts and seeds are well combined with the dates.

Place cling film over a baking tray, press the mixture evenly making sure it is compact. Place in the fridge for approximately 1-2 hours to allow it to set. 

Cut into even bars and enjoy as part of a snack or to take to work for lunch.

 

INGREDIENTS:
(makes approx. 12 bars)

Dry Ingredients:

  • 175g pumpkin seeds
  • ½ cup pecans
  • 3 tablespoon cacao nibs
  • 2 tablespoons chia seeds
  • 1 tablespoon hemp seeds
