Banana-Nut Nice Cream

We’ve all done it, our eyes are bigger than our tummies and we end up making enough smoothie mix for four. This recipe is the perfect way to use any shake leftovers, or if you just want a yummy dessert that’s as decedent as it is nice. No refined sugar, no naughtiness.

METHOD:

This recipe is the same base as our Choc & Nut Supreme Smoothie, but where it becomes so much more than a smoothie, is in the post-blender process.

Starting with the almond milk, add all your ingredients to a blender and blend until smooth. Pour the thick mixture into a Tupperware or freezer safe container and place in the freezer.

Leave the mixture for ten minutes. Read, catch up on your texts, do burpees – whatever floats your boat. After ten minutes or so, remove the container from the freezer and stir. You’ll notice ice crystals will be starting to form. Break them down. Keep checking on your mixture, every fifteen minutes or so and stir to break down that ice formation. You’ see your smoothie start to take on a slush-like consistency. The longer you leave it between stirring, the larger the ice crystals will be and they harder they’ll be to break up.

Once you’ve got your nice cream to your preferred consistency, serve in an ice cold glass or bowl and add toppings of your choice!
