Selasi's Organic Peanut Butter and Coconut Protein Balls

This year's The Great British Bake Off was full of highlights, but one of the biggest was Selasi Gbormittah: Biker, Baker, Banker. Selasi was cool, calm and collected and won the hearts of the British Public with his attitude and skill. After Selasi gave himself the moniker of 'baking athlete', we couldn't wait to send him some Neat products to see what he could put together. The result? Tasty and energy packed Organic Peanut Butter and Coconut Protein Balls.

METHOD:

Blend the oats until you have a chunky flour, then add to a bowl with the rest of the dry ingredients, excluding the milk and peanut butter. Mix well.

Add the peanut butter and stir in. To combine the mixture, add the milk a little at a time. Stop when the mixture binds to form lumps, but isn't sticky. Roll into walnut sized balls and pop into the fridge to firm up.

 

INGREDIENTS:

  • 1 serving of Neat Nutrition Protein (Chocolate)
  • 1 cup of blended oats
  • 1/2 cup desiccated or shredded coconut
  • 2 tablespoon crunchy organic peanut butter
  • 1 tablespoon cocoa powder
  • Semi-skimmed milk to bind
