Pumpkin & Peanut Protein Muffins

Pumpkin season is here! And we're celebrating in style with these sweet pumpkin muffins. Filled with warming spices and topped with sweet maple syrup and toasted pecans, they'll give you all those cosy Autumn feels!

METHOD:

Combine all your dry ingredients together in a mixing bowl. Stir until well combined before adding in the pumpkin puree, vanilla, milk, oil and nut butter.

Once the muffin mixture is smooth, line a muffin tin and add 3/4 of the mix to each cupcake case.

Bake for 16-18 minutes at 175c, or until you can insert a toothpick and it comes out clean. Serve with a toasted pecans, a drizzle of maple syrup and nut butter!

 

INGREDIENTS:

(makes approx. 8 muffins) 

  • 1 cup oat flour
  • 1/4 cup plain flour
  • 1 sachet Neat Nutrition Plant Protein (Vanilla)
  • ½ cup granulated stevia
  • ½ cup coconut or brown sugar 
  • 1 cup pumpkin or sweet potato puree 
  • 1 tbsp baking powder
  • 1 tsp vanilla extract
  • 1/2 cup almond milk
  • 1 tsp sea salt
  • 2 tsp cinnamon
  • 3/4 tsp ginger
  • 1/4 tsp nutmeg
  • 1/3 cup olive oil
  • 1 tbsp nut butter - we used crunchy
  • Toppings: toasted pecans, nut butter and maple syrup
