Carrot and Coriander Soup

We don't know about you, but this cold weather and never-ending winter has us craving all the warmth at lunchtime! So instead of a packing another cold, unappealing salad for lunch tomorrow, try this plantbased carrot and coriander soup instead. It'll provide all the warmth and comfort you need whilst still making sure you're getting in plenty of micronutrients and protein thanks to our Naked Vegan Protein. Simply prep it the night before and bring it to work to warm up the following day!

METHOD: 

First, start steaming the carrots until soft.
When the carrots are almost cooked, start to fry the oil, onion, garlic and ginger in a pan on a medium heat on the hob. Add in the cooked carrots to brown them off with the onions and seasonings.
Add the cooked vegetables to a blender with the stock, milk and coriander and blend well. Add in the protein last and blend again until smooth.
