Cheat's Chocolate Chip Cookie

Whipping up a whole batch of cookies is not only time consuming, but often means you end up eating half the batch in one sitting, or that you're left with a load of stale, uneaten cookies! This single serving microwaveable cookie recipe is the answer to this first-world problem… and it also happens to contain a good dose of protein too!

METHOD: 

First, make your flax eggs and leave them to the side whilst you mash the banana and add all your other ingredients together, except for the chocolate chips.

Once your flax eggs have thickened and become slightly 'gummy' in texture, mix this in and add the chocolate chips.

Put the mixture into greased ramekin dishes and microwave for 1 1/2 - 2 minutes.
