Chunky Monkey Protein Porridge
With the weather definitely getting colder here in the UK, we're officially declaring it porridge season! This amazing banana, chocolate and walnut combo is a great way to mix up your standard bowl of pr-oats (aka. protein oats). It's made with quinoa flakes and is topped with a protein whip, which tastes just like having a dollop of whipped cream on your oats!
METHOD:
Toast the walnuts in a dry non stick pan until golden, leave half in the pan and put the other half to one side.
Mix the protein whip ingredients in a bowl until a mousse-like texture has formed. Put to one side.
Pop all the porridge ingredients except the chocolate chunks in the pan with the walnuts, stir over a low heat until thickened.
Quickly stir through the roughly chopped chocolate and pour into a bowl.
Top the porridge with a dollop of coconut yoghurt and the chocolate protein mousse. Scatter over the banana, chocolate, toasted nuts and coconut.
