Festive Protein Granola

Need something light for breakfast before all the Christmas feasting begins? This is exactly the festive recipe you need! Whip it up on Christmas eve and impress your family in the morning by serving them your homemade, protein-packed, winter-spiced granola.

METHOD:

Preheat your oven to 170c. and chop up the nuts into chunky pieces.

Mix the oil, maple syrup and vanilla essence in a big bowl, then add the oats & protein powder and stir so they’re nicely covered. Pour out onto two baking sheets to ensure even cooking.

Pop them in the oven and bake for 20 minutes. Take out and add the nuts, seeds & dried fruits across both trays, then return to the oven and cook for a further 5-10 minutes, depending how golden and crunchy you like your granola. 

Let it cool, then store in an airtight container for up to 4 weeks.

 

Festive Protein Granola (Serves approx. 8)
  • 300g oats
  • 1 scoop Neat Nutrition Plant Protein (Vanilla)
  • 50g pecans
  • 50g hazelnuts
  • 25g pumpkin seeds
  • 5 tbsp. chia seeds 
  • 4 tbsp dried cranberries
  • 40ml walnut or coconut oil 
  • 100ml maple syrup
  • Few drops of vanilla essence
  • 2 tsp cinnamon
  • 1/2 tsp mixed spice
  • 1/2 tsp ginger
