Hot Cross Protein Loaf

Hot cross buns are what Easter is all about and one of our favourite things is making a healthier version of a naughty snack. So, Hannah Potter developed this delicious Easter loaf for us, so you can have your cake, and eat it too!

METHOD:

Line and grease a loaf tin and preheat your oven to 160C.

Combine together all of the cake ingredients; making sure to mix them well! You can do this by hand, or with a food processor/mixer. Pour the batter into the pre-lined tin and pop in to the oven for 30 minutes.

Once baked, (you'll know it's done when a knife comes out clean), take the cake out of the oven and out of the tin before placing on a cooling rack.

While the loaf is cooling, you can make the icing! Simply mix all of the icing ingredients together and spread over the loaf in a cross shape for a festive flourish!
