Purple Carrot Breakfast Bowl

Tomorrow is International Carrot Day! As a vegetable that packs a lot of health benefits, carrots are best known for being loaded with beta-carotene, which is converted into vitamin A in your liver and is an essential nutrient for good vision (helping you see in the dark!). Here's a beautiful purple breakfast bowl recipe to help you celebrate the humble veggie...

 

Purple Carrot Breakfast Bowl 

METHOD: 

The night before, preheat your oven to 180c and roast your purple carrots in the coconut oil, cinnamon, and 1 tsp maple syrup until very soft - this should take around 50 min - 1 hour. 

Once the carrots are cooked and cooled, blend in a food processor with the yogurt, protein, extra cinnamon and an extra dash of maple syrup to taste. As you're blending, add a splash of milk if needed to get a smooth but thick consistency. 

Serve with extra yogurt, fruit, and granola if preferred.
