Almond Butter Sandwich Cookies
Biscuits and cookies are one of those naughty treats that always break our willpower, so our friends over at Bali Zest have created a healthier spin on the classic sandwich cookie, using our Matcha Green Tea Powder.
METHOD:
First, preheat the oven to 180C.
To make the cookies, place the almond butter and coconut oil in a food processor and blend until smooth. Add the egg & blend again until fully combined. Finally, add the coconut flour, pink salt and baking soda, then blend well.
Gently roll the mixture into small balls before placing on a lined baking tray and flattening out a little. Bake in the oven for ten mins or until golden brown. Remove from the oven & allow to cool completely before spreading on the filling.
To make the filling, place the cashew butter in a food processor along with the coconut oil and vanilla powder and blend until smooth and creamy. Separate the mixture into two halves and stir in the matcha powder to one and the raspberry powder to the other. Spread the filling evenly onto the cookies and sandwich them together before devouring!
INGREDIENTS:
(Makes roughly 12 small sandwich cookies)
For the cookies:
- 170g almond butter
- 11/2 tablespoon coconut oil
- 1 egg
- 170g coconut flour
- pinch of pink salt
- 1/2 teaspoon baking soda
For the filling:
- 200g cashew butter
- 2 tablespoon coconut oil
- 1 teaspoon vanilla powder
- 2 teaspoon Matcha Powder
- 2 teaspoon raspberry powder
