Just because the sun is finally shining, doesn't mean we want to give up our beloved bowl of protein oats. So we're switching up our hot porridge for overnight oats to stay cool this summer.
First, mix together the milk, protein, 1/2 the banana (mashed), chia seeds, oats. Leave in the fridge overnight, or for at least 4 hours, and give it a good stir in the morning.
Place the tbsp of ghee or coconut oil in a pan with the tbsp of sweetener of choice, cooking over a slow heat and stirring constantly until the mixture thickens and browns, without burning. Top the oats with half a chopped banana, chopped nuts and drizzle over the caramel sauce.
