Although a banana-based ice cream may seem like an unconventional way to recreate a Cherry Bakewell Tart, the flavours here will still very much remind you of the classic British tea-time treat. It's the perfect breakfast or dessert for a warm, sunny day... if we ever have one of those!
Chop up your bananas into chunks and place in the freezer. Freeze for at least 4 hours but preferably overnight.
Place your frozen bananas and cherries into a high powered blender or food processor and blend together. This takes some patience, scraping down the sides when necessary. After a few minutes, the fruit will go from small chunks to a thick, smooth ice cream consistency.
Add in your almond extract, vanilla and protein and blend again. If needed to bind, add the milk of your choice a tbsp at a time, but be careful not to add too much. Serve and enjoy!
