Banoffee pie; the much-loved British dessert made with crushed digestive biscuits coated in butter, thick oozing caramel and a mountainous dollop of cream. It's a totally delicious combination that we thought we'd recreate with a few Neat twists!
We've swapped the usual condensed milk for a thick date caramel and we've packed the banana 'cream' with creamy coconut yogurt and vanilla whey protein -perfect for layering up in jam jars for a healthy dinner party dessert!
Starting with the base ingredients, place everything into a food processor and blend until well combined, but still a little chunky.
Put this to the side and give your food processor a clean before blending up the banana cream layer until smooth.
Again, put this to one side and next blend up your dates (after removing the pits). Add the water slowly and scrape down the sides of the blender when necessary until the dates and water forms a thick, smooth caramel.
Time to assemble! Layer up small jam jars with the crumbly base mixture, before topping with caramel, sliced banana and banana cream. Repeat this as many times as you need.
