Peanut Butter & Chocolate Chip Cookie Dough
If you're anything like us, making cookies always involves more dough going in your mouth than in the oven! So we've taken inspiration from this tempting treat, creating an indulgent peanut butter, chocolate chip cookie dough with a healthy twist. It'll satisfy your sweet tooth whilst fuelling you with a great balance of protein, carbs and healthy fats... dreams really do come true!
Once you've drained and rinsed your chickpeas, if you want a super smooth texture, it helps to remove some of the outer shells from your chickpeas - but be warned, this is not a quick task!
Once shelled, start to break down your chickpeas in a food processor or Nutribullet, scraping down the sides as needed. Then simply add in all your other ingredients except the chocolate chips and keep blending until smooth and lump-free.
Mix in your chocolate chips and devour with an extra dollop of peanut butter.
Chocolate Chip Cookie Dough (Serves 3-4)
- 1 can chickpeas, drained and rinsed
- 2 scoops vanilla protein
- 1 tbsp peanut butter
- 2 heaped tbsp peanut flour (alternatively add extra peanut butter)
- 1/2 cup milk of choice
- 1 tsp vanilla essence
- 2 tsp maple syrup
- A pinch of salt
- 2 handfuls of dark chocolate chips / chopped chocolate
