Sweetcorn and Courgette Fritters
Whether you're looking for some weekend brunch inspiration, or need something to refresh your lunchbox, this sweetcorn fritter recipe is a delicious way to get in some extra veggies.
Try serving them with a runny poached egg, sliced avocado and even some grilled halloumi for a seriously healthy feast.
Combine the protein, flour, egg and milk together until well combined, without lumps. Crumble in half a stock cube and add in the sweetcorn, courgette, paprika and seasonings and mix well.
Heat a small amount of oil in a pan over a medium heat. Once hot, place two tablespoons of mixture in the pan and cook on both sides until brown and crisp.
Repeat this for the rest of the mixture and serve with a poached egg and avocado for the perfect weekend brunch.
Sweetcorn and Courgette Fritters (Serves 1-2)
- 50g fresh or frozen sweetcorn
- 50g grated courgette
- 20g Neat Nutrition Naked Vegan Protein
- 30g plain flour (we used gluten free)
- 1/2 stock cube
- 1/2 tsp paprika
- 1 egg
- 10 tbsp milk of choice
- salt and pepper to season
