Chunky Chocolate and Coconut Protein Cookies

Cookies can so often be loaded with sugars and syrups but cookies are so good! So here’s a quick and easy recipe that’s packed with delicious ingredients and flavours. 

For extra protein, there’s added chia seeds and walnuts, as well as Neat Nutrition Protein Powder. The oat flour used replaces regular flour as oat flour is packed with fibre and protein – you can make your own oat flour by blending some oats in a powerful blender of food processor!

Coconut Protein Cookies Recipe | Neat Nutrition. Clean, Simple, No-Nonsense.

 

METHOD:

Begin by preheating the oven to 180 degrees Celsius, 350 Fahrenheit, Gas mark 4. 

In a large bowl, whisk together the dry ingredients. Add the coconut oil, walnuts, coconut milk and Sweet Freedom choc shot coconut and stir together to form the batter.

Using an ice-cream scoop or your hands, form the cookies. Add each onto the baking sheet and sprinkle on some raw cacao nibs. Bake for 15-20 minutes depending how crispy you want the cookies. 

Cool the cookies directly on the baking sheet for 10 minutes. If you want a naughty extra, add dark chocolate pieces to melt when baking, or why not spread some nut butter?
