We've given this plant-based protein banana bread recipe a festive twist by adding some warming gingerbread spices. It's sure to be a firm favourite with your family this Christmas time, and is best served warm with a cup of tea, or eaten for breakfast with a spoonful of nut butter!
Preheat oven to 170c and line a loaf pan with parchment paper or grease the inside.
In a medium mixing bowl, mix together the wet ingredients - the mashed banana, milk, syrup, oil, molasses, vinegar and vanilla extract. In a separate bowl, mix together the remaining ingredients.
Mix together the wet and dry ingredients and pop into the loaf pan. Add a few extra crushed nuts on top.
Bake for 30 minutes. Once done, turn the oven off and leave the banana bread in there for an extra 10 minutes. Enjoy - It tastes best still warm from the oven!
