Vegan Protein Granola

Bored of porridge for breakfast? Try this delicious alternative which is perfect with some Greek yoghurt and fruit to get your morning started in the right way!

 

Vegan Protein Granola Recipe | Neat Nutrition. Clean, Simple, No-Nonsense.  

METHOD:

Preheat your oven to 170c.

First off, crush the macadamia nuts. If you have a food processor, easy breezy, but sometimes it’s more fun to do this stuff by hand! Use a rolling pin to get nice, uneven pieces, then place to one side.

Mix the oil, maple syrup and vanilla essence in a big bowl, then add the oats & protein powder and stir so they’re nicely covered. Pour out onto two baking sheets to ensure even cooking.

Pop them in the oven and bake for 20 minutes. Take out and add the nuts, seeds and dates across both trays, then return to the oven and cook for a further 5-10 minutes, depending how golden and crunchy you like your granola. 

Let it cool, then store in an airtight container for up to 4 weeks.

 

INGREDIENTS:

  • 300g oats
  • 1 x serving Neat Nutrition Plant Protein Powder (Vanilla)
  • 50g sunflower seeds
  • 50g macadamia nuts
  • 40ml Macadamia Nut Oil
  • 150ml maple syrup
  • Few drops of vanilla essence
  • Pinch of cinnamon
  • 50g chopped dates
