Vegan Protein Mediterranean Meatballs

We know, meatballs without the meat? But bear with us because this dinner creation from The Healthy Beard is packed with so much flavour, you won't even notice! Perfect if you're trying out Veganuary or just want to switch things up a little.

METHOD:

Preheat the oven to 200°C/400F/Gas mark 6.

Place all of the ingredients into a food processor and pulse until all of the ingredients turn into a mushy consistency (adjust seasoning if needed)

Begin forming the meatballs by hand – scooping around a walnut size amount and rolling between your palms. Place them on a baking tray lined with greaseproof paper. 

Pop in the oven and bake for approximately 20-25 minutes.

Serve with your favourite pasta and Bolognese sauce.

Vegan Protein Mediterranean Meatballs
(Makes 10)

  • 1 can butter beans
  • ½ onion
  • ½ cup black olives
  • 2 tbsp chia seeds
  • 2 tbsp rapeseed oil
  • 6 sundried tomatoes
  • ½ cup walnuts
  • 2 cloves garlic
  • ½ cup oats
  • 1 scoop Neat Nutrition naked vegan protein
  • Handful fresh parley
  • ½ tsp smoked paprika
  • Salt and pepper to taste
