This granola recipe is seriously addictive (as any good granola should be!), is packed full of protein and fibre, and is generally a pretty awesome start to the day. We've mixed up our usual granola recipe to make this one vegan-friendly, higher in protein and extra crunchy thanks to the addition of quinoa.
Preheat your oven to 160c.
Mix all dry ingredients together in a large bowl (except the cherries or pecans) before adding in the wet ingredients and stirring well.
Spread on to two baking trays and place in the oven for about 15 minutes. Give a good stir, and then add your chopped pecans evenly across both trays.
Place back in the oven for another 10-12 minutes, or until your granola turns golden brown. It can catch quickly, so be careful that it doesn't turn black!
Leave to cool, stir in your sour cherries and store in an airtight jar or container.
