We love porridge as much as the next person, but sometimes it nice to find a breakfast alternative that brings something new to your morning. Enter chia pudding. And matcha. Because we like to get fancy and our Organic Matcha Green Tea is AWESOME.

Fun fact – Chia means strength in Mayan and was grown by the Mayans and Aztecs. They may have even used it as an energy booster, so if it’s good enough for ancient civilisations, it’s good enough for us! Full of omega-3 fatty acids (the same ones you find in fish like salmon and mackerel), carbohydrates, protein, fibre and antioxidants, chia seeds are pretty amazing.

METHOD:

You’ll need to prep this one ahead of time to allow the chia seeds to absorb all that moisture so it’s perfect for making the night before, ready to have for breakfast.

Boil some water and allow to cool slightly. Pop your two scoops of matcha into a bowl and add enough of the hot water to make a paste. Once all the powder has dissolved, add in your coconut milk to make a nice light green liquid.

Add you chia, stir and place in the fridge. By the morning (or in a couple of hours) you’ll have a pudding worthy of the Ritz!
