Carrot Cake Protein Balls

It's International Carrot Day! What better way to celebrate than by incorporating those orange delights into a recipe? Carrots are a great source of beta carotene which, among a host of other benefits, helps keep your skin healthy. 

Carrot cake is a big favourite in Team Neat so when you can’t have carrot cake, why not have a healthier alternative? These protein balls are based on the classic baked delight but are a lower calorie, alternative treat.

METHOD:

Grate your carrot and remove excess moisture by patting down with kitchen roll (if the carrot is too wet, the mixture won't bind).

Add all ingredients to a food processor or blender and mix until the carrot is blended. If the mixture is too moist, add more oats to bind. 

Roll into balls and keep in the fridge.
