There's nothing more indulgent than eating raw cookie dough straight out the bowl, so ever since we discovered you can make a healthier version from chickpeas and protein powder, we've been totally sold! We first made this Chunky Monkey Cookie Dough back in 2016, and now we're back with a cheesecake-inspired version...
Rinse the beans in warm water. Then, simply combine all the ingredients - except the chocolate chips - in a high-powered food processor and blend until smooth. This might take some time, but getting a smooth texture is worth the wait!
Stir in the chocolate chips and store in the fridge or serve.
