Chocolate and Pistachio Chia Pudding

Chia pudding might look a little bit like frogspawn, but it actually tastes similar to rice pudding and is a surprisingly delicious way to start the day! Chia seeds are also a nutritional powerhouse, containing omega-3 fatty acids, fibre, antioxidants, iron, and calcium. Make the recipe the night before so that in the morning you can grab a healthy breakfast on-the-go that tastes just like dessert!

METHOD:

The night before, mash the banana in a bowl until smooth and then stir through the protein powder, chia, tahini, protein, 0.5 tbsp cacao, cardamom, pistachios and milk until smooth and combined with no lumps.

Add more milk to loosen the mixture if needed. It wants to be the consistency of double cream. Taste for chocolaty-ness (totally should be a word!) and add more if needed. Cover and pop in the fridge overnight.

In the morning remove from the fridge, give the chia a stir, adding more milk to help loosen if needed - to the consistency you prefer. I like it like mousse. Top with a dollop of yoghurt, peanut butter, chopped chocolate nuts, fruit and a little coconut for decoration.
