Cranberry and Cashew Christmas Protein Balls

If you enjoyed our recent mince pie oatmeal recipe, this festive healthy snack is also going to be right up your street! These protein balls are essentially little bites of Christmas; made with cashews, dried cranberries and warming spices to satisfy your tastebuds and keep your energy levels high. They’re also much more acceptable to pull out of your pocket mid-meeting than a handful of Celebrations (even if it is Christmas!).

METHOD: 

First, blend your cashews and protein powder in a food processor. Once there's no large chunks left, add in the dried fruit and blend again. Add in all your other ingredients and blitz to bring everything together.

Roll the mixture into bitesized balls and store in the fridge. 

 

INGREDIENTS:

(makes approx. 16) 

  • 1/4 cup pitted medjool dates
  • 1/4 cup cranberries
  • 1/4 cup apricots
  • 3/4 cup cashews
  • 1/2 sachet Neat Nutrition Protein (Vanilla)
  • 2 heaped tbsp. mincemeat of choice 
  • 1 tsp maple syrup
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg & ginger
  • A pinch of salt
