Lemon and Coconut Protein Balls

We love a good chocolate-y protein ball here at Neat, but sometimes even us chocoholics need a sweet snack with a little more zing! These lemon and coconut protein balls are super refreshing and are amazing for throwing in your bag for a healthy snack on the go. 

 

Lemon and Coconut Protein Balls

 

METHOD: 

First, place the almonds and the protein powder in a food processor and blend until the nuts are broken down almost to a powder, with no large pieces of nuts left.

Add in your pitted dates, lemon juice and coconut and blend again until well combined. Roll the dough together to make bitesized balls and roll them in desiccated coconut to finish!

Lemon and Coconut Protein Balls (makes about 20) 

 

  • 160g almonds
  • 180g medjool dates
  • 1 scoop of Neat Nutrition vegan vanilla protein
  • Juice of 1 1/2 lemons
  • 3-4 tsp desiccated coconut 
  • 1 tsp coconut oil
  • extra desiccated coconut for decorating
