Matcha Lemonade Cooler
In need of a quick energy boost but don't fancy sipping on a matcha latte in the sunshine? Swap your usual hot matcha for this fruity lemonade cooler - it makes for a deliciously refreshing, non-alcholic cocktail to enjoy on summer evenings and will keep you feeling energised all night long.
In a small bowl, whisk up the matcha with about 3 tsp of boiling water until smooth and free from lumps. In a jar or glass, place ice, berries, the juice of 1/2 a lemon and mint leaves. Pour in the matcha and top up your glass with tonic water or lemonade, stirring thoroughly.
Matcha Lemonade Cooler:
- 1 small tsp matcha green tea powder
- juice of 1/2 a lemon
- tonic water or lemonade to fill your jar or glass (approx. 300ml)
- chopped fruit, lemon and mint to serve
