We can't deny that we love jumping on a food trend here at Neat - especially during lockdown when the kitchen has become our solace! And as pancake-fanatics this one was right up our street, although of course we had to give the internet's favourite pancake cereal recipe a Neat, protein-packed twist!
Start by blending all your ingredients in a blender until your batter is nice and smooth - make sure to add the milk first so the protein powder doesn't stick to the blades.
Add some oil to a frying pan on a medium heat and wait for the pan to get hot. Once there’s a slight sizzle, add a tsp of batter to the pan and repeat until the pan is full of mini pancakes! Once they start to bubble on the top and are nice and brown on the bottom, flip them all!
Once cooked on both sides, scoop all your pancakes into a bowl and repeat until you've used up all your batter, oiling the pan as needed to stop them from sticking. Once you're done, add them all to your bowl with fruit, yoghurt and a little maple syrup before digging in!

- 1 serving of Neat Nutrition Plant Protein Powder (Vanilla)
- 1 banana
- 1 cup almond or oat milk
- 1/2 tbsp baking powder
- 1 tsp vanilla extract
- Coconut oil or spray for cooking
- Your favourite toppings
