Protein Welsh Cakes

With it being St David's Day this Wednesday, we thought it was only appropriate to delve into Welsh tradition for this week's recipe. These tasty Welsh Cakes were inspired by the classic recipe, however we've given the ingredients a little Neat twist!

METHOD:

Mix the flour, sugar or sweetener, mixed spice, whey protein, baking powder and a pinch of salt together in a bowl. Rub in the butter and coconut oil until the mixture is crumbly and mix in the currants.

Stir in the beaten egg and mix until a soft dough forms, adding just a splash of milk if it seems a little dry. 

Roll out the dough on a floured work surface - it should be about the thickness of your little finger. Cut out rounds, and re-roll any trimmings until all the dough is used up.

Grease a frying pan with a little extra butter and place it on a medium heat. Cook the cakes in batches for a couple of minutes each side until they are golden brown and cooked through.Serve with yogurt and blueberries and butter and jam.
