Sweet Potato Hash Browns
Best known for being a tried and tested hangover cure, a full English breakfast isn’t quite the same without a good hash brown. This recipe uses sweet potato and vegan protein powder to give the British favourite a healthier twist - it’s time to step up your brunch game!
Simply mix together all your ingredients in a bowl until well combined.Put some butter or oil of your choice in a large pan at a medium heat, and whilst this is heating up use your hands to form thin patties.
Once your butter or oil is sizzling place your hash browns into the pan pressing them down with a spatula until they are nice and thin.
Cook them on both sides until golden brown and crispy on the outside and serve.
SWEET POTATO HASH BROWNS
- 2 cups loosely packed grated sweet potato
- 1 thinly sliced shallot
- 1 egg
- 1/3 cup protein
- ½ tsp paprika
- ½ crushed vegetable stock cube.
- 1 small clove of garlic, minced
- Salt and pepper to season
