These veggie and feta egg muffins are great to prep on a Sunday ahead of a busy week. They're perfect for grabbing out the fridge as a quick, savoury snack, or for throwing in a tupperware with veggies and rice to make a tasty packed lunch.
Whisk your eggs and mix in the protein and cream cheese until smooth. Stir in the chopped veggies, feta and seasonings.
Pour the mixture into a grease muffin tin and bake at 175c for 15-20 minutes.
